I don't know who needs to hear this but Easter is this Sunday! While I'm sure you have your menu already planned for a nice Easter dinner and I hope it includes something rhubarb.  It's the season for fresh rhubarb here in the Ozarks and mine has returned for another year of tasty desserts and jams. As spring arrives so do many delicious fruits and berries both wild and tamed, a nice by-product from our gardens to the table. Rhubarb is easy to grow and is one of the first to break ground, and right now is the perfect time to plant it too for a harvest next spring.  I make pies and jam mostly with my little bed and I always combine strawberries with the rhubarb to cut the "tang" out of it. This recipe for strawberry Rhubarb pie is an old favorite from generations ago making it foolproof. Like any pie recipe, you can cheat with a store-bought crust but homemade is always best and this recipe includes a crust recipe too. If you don't grow your own, you can find rhubarb in the stores this time of the year.  Happy Easter foodies.  more

In case you didn't know, because I didn't until recently, Easter is in March this year, the 31st to be exact.  Is anyone else feeling like everything this year is coming at us early? Let's get a jump start on the Easter menu and all the lovely dishes we plan to prepare, with a dessert first.  We don't have any local little kids, but the adults still appreciate a homemade treat and Easter is a fun time to make rice crispy treats, spring style. These key lime-enhanced treats scream spring and are perfect for Easter baskets or the table. These are a tasty upgrade from the originals. White chocolate adds to the richness of this old favorite. I love it when something good gets even better and these are just that. Make a batch, share a batch is my motto.  It's spring peeps, enjoy!  more

I'm craving all the Irish foods as we approach St. Patricks Day on Sunday. Aside from the regular dishes, I'm trying a new one this year.  Boxty are Irish Potato pancakes, not sweet but crispy and savory. Once considered a "poor house bread" by using leftover mashed potatoes, they were a staple in Ireland in the 1700s. Today's version is served hot from the pan, with butter, sour cream or honey with chives added to enhance the flavor.  more

March is here and that means St. Patrick's Day offers a new menu of traditional foods to sample and enjoy. As we end the month of February, my waist reminds me that winter has gotten the best of me and I need to get back on track. Winter weight is real and while I'm only a few pounds over my goal, my body feels it. I've never stopped watching my carb intake and for the most part, I'm eating low-carb and healthy but movement has been less than desired due to the weather. Now, that we are adding minutes to each day, it means more actively outside and that will help.  So, let's look forward to longer days and better eating, I'll start with this recipe that has been making the rounds on Facebook all week. If you like egg rolls then you'll love this one-bowl meal. I've made this with lean ground beef, and pork sausage too but never chicken as this calls for but it's good no matter the meat you choose. Paired with zero-carb tortillas for taco style, this makes a very filling meal with little guilt.  Full of flavor and easy to prepare, this recipe is a keeper for everyone wanting to eat better.  Farewell February. more
