I'm calling it! It looks like we might have an early fall this year. With that thought you know what comes next, pumpkin. Yes, it's pumpkin season, the seasonal flavor that deserves a year-round campaign, too much? I love pumpkin truth be told and I do use it more than a couple of months out of the year because it's a super food. Pumpkin puree boosts the immune system, full of beta carotene, vitamins C and E plus a good supply of iron and fiber just to name a few of its good properties. It's also beneficial for dogs with an upset stomach or loose stools, one reason I always have a can in the pantry. Another good reason is cookies. Pumpkin puree makes the best oatmeal cookies and this recipe is so easy. I like to add mini chocolate chips to the batter when I'm craving chocolate. But don't wait for the cravings to convince you to try this favorite fall recipe that will soon become an annual treat. It doesn't matter if you are team pumpkin or not, these cookies are hearty and paired with a hot beverage, could pass for breakfast on the run. Pumpkin season has kicked off, so treat yourself, it's only just begun.
