Down Home with Sue French Onion Beef Casserole

This yo-yo weather has me all confused, from warm and sunny to cold and windy, you never know what to cook! I'm challenging myself to cook one new dish a week for this month, being a short month it should be easy.  But in reality, I  get stuck in a food rut, fixing the same dishes each week or so and that gets old. So, while it is still winter I'm looking for recipes that stick with you, in a good way. While I'm still carb conscious, I do allow myself a little pasta now and then.  This French Onion Beef casserole caught my eye for it's simple ingredients and hearty flavor making it my challenge dish for this week. Can't go wrong with a good casserole.  With the internet at our fingertips, there's no reason to be in any rut, especially a dinner one.  So, step out of your comfort zone whenever you feel like the same old menus are becoming boring, or blame the weather! 

French Onion Beef Casserole

Ingredients

  • 10 ounces dried egg noodles
  • 1 pound lean ground beef
  • 2 cans (10.75 ounces, each) condensed cream of mushroom soup
  • 1 (15 ounce) jar Lay's French Onion Dip
  • 1 cup French's fried onions

Directions

    • 1. Preheat oven to 350 degrees F. Spray a 9x13-inch baking pan with non-stick spray.
    • 2. Cook egg noodles in a large pot of water, according to package directions. Drain.
    • 3. Cook and crumble ground beef in a large skillet, over medium-high heat, until no longer pink. 4. Drain any grease.
    • 5. Add soups and French onion dip to beef in skillet. Stir together to combine. Gently fold in cooked egg noodles to mixture.
    • 6. Pour mixture into prepared pan. Sprinkle fried onions evenly over top.
    • 7. Bake for 25 to 30 minutes or until thoroughly heated. Serve warm and enjoy!
