Dare to Dine: French onion butter rice

For our April "Dare to Dine," we are featuring a common household staple that has remained popular not only since the Great Depression era but also as a timeless side dish: rice. If I had a penny for every way to prepare rice, I could retire.

Growing up, I mainly enjoyed rice pudding since my mum didn't often cook rice in other ways. As an adult, I quickly developed a fondness for fried rice, with Spanish rice as my second favorite.

This rice recipe is inexpensive to make; you usually have all the ingredients on hand and it's packed with flavor. Go ahead and make it your own by adding some herbs or meat for a full meal.

I appreciate side dishes like this one that don't take much time; you can cook the rice ahead of time, and this recipe can be doubled.

In this uncertain time all over the country, one thing remains the same: We still have to eat. But we can eat smarter, not cheaper, with rice. Enjoy!

 

French Onion Butter Rice

• 1 cup white rice

• 2 cups beef broth

• 1 yellow onion, sliced

• 2 tablespoons butter

• 1 teaspoon garlic powder

• 1/2 cup shredded cheese of choice

 

Directions:

In a skillet or saucepan, sauté the sliced onion in butter until caramelized. Add the rice, beef broth and garlic powder. Simmer over medium heat until the liquid is absorbed and the rice is tender. Once cooked, stir in your choice of shredded cheese and serve immediately.
