Yes, you heard right…grilled pizza! This isn't your average delivery fare. It's a fun, fiery twist on a classic that adds a delightful smokiness and a crispy texture that can't be achieved in a regular oven. The toppings? We're talking sweet red peppers, spicy jalapeños, juicy pineapple, and a daring drizzle of hot honey that brings everything together in a mouth-watering harmony of flavors. Ready to become a pizza grillmaster? Let’s get cooking!

Ingredients:

For the Dough:

• 2 1/4 teaspoons active dry yeast (one packet)

• 1 teaspoon sugar

• 1 1/2 cups warm water (around 110°F)

• 3 1/2 cups all-purpose flour, plus extra for dusting

• 2 tablespoons olive oil, plus extra for oiling the bowl and brushing

• 1 1/2 teaspoons salt

For the Toppings:

• 1 large red bell pepper

• 2 jalapeños

• 1/2 cup pineapple chunks (fresh or canned if in a pinch, but drain and pat dry)

• 1 cup shredded mozzarella cheese

• 1 cup shredded provolone cheese

• Fresh basil leaves (optional, for garnish)

For the Hot Honey:

• 1/2 cup honey

• 1 tablespoon hot sauce (adjust based on your heat preference)

• 1/2 teaspoon chili flakes (optional for extra heat)

Equipment:

• Pizza stone or heavy-duty baking sheet

• Rolling pin

• Large mixing bowl

• Small saucepan

• Knife

Instructions:

Step 1: Prepare the Pizza Dough

1 Activate the Yeast: In a small bowl, dissolve sugar and yeast in warm water. Let it sit until foamy, about 5 to 10 minutes.

2 Mix the Ingredients: In a large mixing bowl, combine flour and salt. Add the foamy yeast mixture and olive oil. Mix until the dough begins to come together.

3 Knead the Dough: Turn the dough out onto a floured surface and knead until smooth and elastic, about 7 to 10 minutes. Add more flour if the dough is too sticky.

4 Let it Rise: Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place until doubled in size, about 1 to 1.5 hours.

Step 2: Prepare the Toppings

1 Prep the Veggies: Slice the red bell pepper and jalapeños. For a milder flavor, remove the seeds from the jalapeños.

2 Grill the Veggies: Preheat your grill to medium-high heat. Lightly oil the peppers and grill them until they're charred and tender, about 3-4 minutes per side. Remove and set aside to cool.

3 Prepare the Pineapple: If using fresh pineapple, peel, core, and cut into chunks. Pat dry with paper towels.

Step 3: Make the Hot Honey

1 Combine Ingredients: In a small saucepan, combine honey, hot sauce, and chili flakes. Warm over low heat until the mixture is well combined, about 5 minutes. Remove from heat and set aside.

Step 4: Grill the Pizza

1 Preheat the Grill: Preheat your grill with a pizza stone or baking sheet inside, aiming for a temperature of about 500°F.

2 Shape the Dough: Divide the dough into 2 balls. On a floured surface, roll out each ball into a thin circle, about 1/4-inch thick.

3 First Grill: Carefully transfer one dough circle onto the preheated pizza stone. Grill for 2-3 minutes, or until the bottom is lightly charred and the top begins to bubble. Flip the crust using tongs or a spatula.

4 Add Toppings: Quickly sprinkle half the mozzarella and provolone on the cooked side of the dough. Add half the grilled peppers, jalapeños, and pineapple chunks.

5 Finish Grilling: Close the grill lid and cook for another 3-4 minutes, until the cheese is melted and bubbly and the bottom of the crust is crispy.

6 Repeat: Repeat with the second dough and remaining toppings.

Step 5: Serve with a Drizzle

1 Drizzle Hot Honey: Drizzle the hot honey over the hot pizzas right before serving.

2 Add Fresh Basil: Garnish with fresh basil leaves for a pop of color and freshness.
